雨果的年代肉丸(Hugo's Meetballs)
菜谱来自大学西餐制作课程的英文烘焙书《On Cooking A Textbook of Culinary Fundamentals, 5th Edition》第13章牛肉部分第315页“雨果的肉丸”。其中一些步骤和调味品有所变通,使得在家也能够成功烹饪。祝您烹饪愉快!
This recipe is from On Cooking A Textbook of Culinary Fundamentals, 5th Edition, on page 315 BEEF part chapter 13. To let ingredients be easier to prepare and the cooking process be more convenient, I've made some change. Hope you can cook well!
用料
Ground beef 绞碎的牛肉 | 0.8kg |
Dried oregano 干牛至叶 | 10ml |
Garlic powder 大蒜粉 | 10ml |
Onion powder 洋葱粉 | 10ml |
Fresh parsley, minced 新鲜的香菜,剁碎 | 30g |
salt 盐 | 5ml |
Pepper 胡椒粉 | 3ml |
Parmesan cheese,grated 帕玛森干酪,碾碎 | 25g |
Eggs, beaten 鸡蛋,打好 | 1个 |
Worcestershire sauce 伍斯特酱(辣酱油) | 10ml |
Bread crumbs 面包屑 | 45g |
雨果的年代肉丸(Hugo's Meetballs)的做法
将所有材料混合并搅拌。
Combine all ingredients and mix lightly.用16号勺,将肉酱平均分成每个2盎司(60克)的球形肉丸。
Using a #16 portion scoop, divide into 2-ounce (60-gram) meatballs and round evenly.将肉丸放在烤盘上,以325℉(160℃)烘烤,直到肉丸凝固,不要变成褐色,大约20分钟。
Place the meatballs on sheet pans and bake at 325°F (160°C) until they are just set, not browned, approximately 20 minutes.排干烤盘上的油脂。用槽式漏勺移出肉丸并把它小心地放入番茄酱中。小火炖20分钟,让肉丸煮好,混合味道。
Drain the grease from the pan. Remove the meatballs with a slotted spoon and carefully drop into tomato sauce. Simmer for 20 minutes to allow the meatballs to finish cooking and to blend the flavors.将肉丸和酱料与意大利面一起食用,也可根据需要选择。
Serve the meatballs and sauce with pasta or as desired.You can enjoy it with your favorite juice.

you fail to find Worcestershire sauce, than you can simply change it into sauce mixed with chilli paste.
如果您没有伍斯特酱,那么你可以直接把它换成酱油加辣椒酱。
pt for the ingredients above, you should also prepare tomato sauce for step 4 simmering meatballs in it.
