Avocado mayoegg sandwich

用料

avocado	half
eggs	4
mayonnaise	1/4 cup
Dijon mustard	1/2 teaspoon
green onion	2 tablespoons of chopped green onion
salt and pepper to taste
paprika	1/8 teaspoon

Avocado mayoegg sandwich 的做法

Place egg in a saucepan cover with cold water. Wait till it boils, immediately remove from heat. Cover and let eggs stand in hot water for 10-12 mins . Remove for hot water, cool, peel and chop.
Place the chopped eggs in a bowl , and stir in mayonnaise, mustard and green onion . Season with salt , pepper and paprika.
Stir and serve on your fav bread or cracker! All done
