wedding cake white frosting
* ingredient list below is the black forest cake frosting I used for my wedding cake
- this is enough to decorate a 4-layer wedding cake (top + sides), and one layer of filling between cake layers
- this has a bit too much powder sugar to my taste, may dial it down a bit more next time and try if it mix well with vanilla extract (skipped this time)

1. black forest's Whipped Cream Frosting
2 cups (500 mL) whipping cream
½ (250 g) package cream cheese, softened
1 cup (130 g) icing sugar, sifted
1 ½ tsp (7 mL) vanilla extract or vanilla bean paste
1 Tbsp (15 mL) kirsch, cherry gin or brandy(optional)
2 Tbsp (30 mL) instant skim milk powder
chocolate shavings and candied or brandied cherries for decor
2. cream cheese frosting in carrot cake
1 pkg (225 g) brick cream cheese, at room temperature
¼ cup (60 g) unsalted butter, at room temperature
3 cup (390 g) icing sugar, sifted
1 tsp (5 ml) vanilla extract
1 tsp (5 ml) lemon juice
lightly toasted walnut pieces, for garnish
3. cream cheese frosting in caramel cake
# center and top and sides of a 3-layer cake
1 lb (500 g) unsalted butter, at room temperature
1 ½ pkgs (375 g) cream cheese, at room temperature
2 to 3 cups (260-390 g) icing sugar
¼ cup (60 mL) salted caramel sauce
4. Whipped Cream frosting for the torte
625 mL (2 ½ cups) whipping cream
85 g (3/4 cup) icing sugar, sifted
10 g (2 Tbsp) instant skim milk powder
10 mL (2 tsp) vanilla extract
450 g (2 cups) sliced fresh strawberries, plus extra berries for décor
icing sugar, for dusting

prep:
soften cream cheese in bowl 2bowl 1: whip cream and set aside
bowl 2:
stir softened cream cheese, then mix cream cheese and powder sugar by hand
fold in half of the whipped cream in this bowl, then pour everything back to the rest of the whipped cream (bowl 1) and mix welladd in almorado or whatever flavor accent you prefer, and soy milk powder or skim milk powder
- could also add vanilla extract here by taste. This recipe has a lot of powder sugar and was sweet enough, so I skipped the vanilla extract

1/2 tsp 2 g cream of tartar

1 ¼ cups (250 g) granulated sugar
1 ½ cups (340 g) unsalted butter, at room temperature
2 tsp (10 mL) finely grated lemon zest
1 ½ tsp (7 mL) vanilla extract

Icing
2/3 cup (160 ml) water
2 ½ cups (300 g) sugar
1/3 cup (80 ml) golden corn syrup
2 egg whites
1 tsp (5 ml) vanilla extract
5. French meringue/ Buttercream
5 large egg yolks, slightly warmed
½ cup (100 g) granulated sugar (caster sugar)
1 Tbsp (15 mL) water
1 tsp (5 mL) lemon juice
1 1/2 cups (340 g) unsalted butter at room temperature
2 Tbsp (30 mL) brandy or orange liqueur (optional)
2 tsp (10 mL) finely grated orange zest
1 tsp (5 mL) vanilla extract or vanilla bean paste
½ tsp (2 mL) salt
12-16 toasted pecan halves
