Chicken Caesar Salad (oven)的做法步骤图

Serves 4.
参考了Jamie Oliver的菜谱。做法简单.
传统的鸡胸肉换成了鸡腿肉(是thigh,不是drumstick),
更鲜嫩多汁,价钱也便宜了一半。
面包丁吸收了鸡汤,好吃到流泪。
虽然在烤箱中完成,耗时较长,但不需要看着,前面准备好,其余的就交给烤箱吧。
自己在菜谱中添加了其他蔬菜,口感更丰富,营养更全面。
沙拉酱的菜谱会另外写一篇。
但这款沙拉,即使不添加任何酱都已经很美味。

用料  

4 chicken legs or thigh cutlet
1 loaf ciabatta bread, sliced
fresh rosemary leaves, roughly chopped
2 bacon
cos or romaine lettuces
*mixed leaves
* tomato, red onion, cucumber……
caesar dressing
shaved parmesan cheese

Chicken Caesar Salad (oven)的做法  

  1. Preheat oven to 200c.
    In a baking tray: snug-fitting
    chicken & bread : well coated with
    olive oil & salt & pepper & rosemary
    chicken sit above the bread
    bake: 200c--45minutes

  2. Drape the bacon over the chicken
    bake: another 15-20 minutes-crispy
    pull chicken meat off the bones.
    tear the lettuce & crutons & bacon into bite size.

  3. Lettuce & crutons & bacon
    chicken
    dressing
    shaved parmesan cheese.

  4. Dressing:
    1/4 of a clove of garlic discarded,
    4 anchovy fillets in olive oil,drained
    • 30g grated Parmesan cheese
    • 1 tbsp low-fat Greek yoghurt
    • juice of 1 lemon
    • extra virgin olive oil

    1 Pound 1/4 garlic 4 anchovy fillets in a pestle & mortar
    until you have a pulp

    2 Add 30g Parmesan &
      1 tbspGreek yoghurt &
      1 lemon juice
    Pour in 3 times as much olive oil as lemon juice
