oil splashed noodle的做法步骤图

500 g flour + 2 g alkaline + 225 g water + salt


xiao-gao-jie

all-purpose flour 365 g + salt 1/4 teaspoon 2g + room temperature water 191 g

用料

salt

oil splashed noodle的做法  

  1. make the dough

  2. rest for 45 mins

  3. knead for 1 min

  4. divide into 10 balls, make the surface smooth

  5. roll each ball into an oval shape, press a line in the middle w/ a chopstick

    seal with oil on a plate and rest overnight in fridge

  6. ---- day 2 ------
    bring dough back to room temp

    prep:
    mince scallion, garlic
    have pepper flakes and powder on the side

  7. ---- boil noodle ----
    stretch long, then split from the middle line


    add to boiling water for 45 s - 1 min

    also boil veggies

  8. ---- each bowl ----
    bok choy 1
    having 1 tsp soy sauce in the bottom of the bowl, add noodles in, add 1/2 scallion, 1 tsp dried chili flakes, 1/4 tsp salt

    splash 1 tbsp smoking oil on top


    optional in lao-fan-gu:
    vinegar
    minced garlic
    sesame seeds
    sesame oil
    pan fried scallion (fried when heating oil)
