make the dough
rest for 45 mins
knead for 1 min
divide into 10 balls, make the surface smooth
roll each ball into an oval shape, press a line in the middle w/ a chopstick
seal with oil on a plate and rest overnight in fridge---- day 2 ------
bring dough back to room temp
prep:
mince scallion, garlic
have pepper flakes and powder on the side---- boil noodle ----
stretch long, then split from the middle line
add to boiling water for 45 s - 1 min
also boil veggies---- each bowl ----
bok choy 1
having 1 tsp soy sauce in the bottom of the bowl, add noodles in, add 1/2 scallion, 1 tsp dried chili flakes, 1/4 tsp salt
splash 1 tbsp smoking oil on top

pan fried scallion (fried when heating oil)
