Peeled mung bean: 300 g (1 cup)
Unsalted butter: 100 g
Honey: 80 g
Red bean paste: as needed

Amanda's version

[mung bean cake] - with spermoderm
250g mung bean
100g crystal sugar
35g butter
15g milk powder
a pinch of salt

[mung bean cake] - without spermoderm
50g xylitol
250g mung bean
20g honey
35g vegetable oil
a pinch of salt

用料  

mung bean (90 g) 1/2 cup
butter (30 g) 2 tbsp + 1/8 tbsp
honey (24 g) 1 tbsp + 1/8 tbsp (.375 tsp)
red bean

mung bean cake的做法  

  1. soak mung bean overnight

  2. steam mung bean for 45 mins

  3. smash the steamed mung bean

  4. in a saucepan, melt butter, add mung bean mash, and honey

    stir for several mins

小贴士

- could also add cranberry (chopped) w/o red bean filling
- 1/4 cup peeled mung bean = 45 g

0.89 tbsp butter (12.6 g) + 2.07 tsp milk powder (5.4 g) + 3 tbsp sugar (36 g) / 2 tbsp honey
