烤鸭香粥 Roast Duck Porridge
吃了北京最好吃的烤鸭后(1949全鸭季),顺便打包鸭架和吃剩的烤鸭回家做香粥。用鸭骨熬制鸭汤再做粥,味道一流
After eating the best Beijing roast duck (1949 roast duck shop), we asked for the duck cage so that I can make duck porridge. Duck porridge made from fresh duck broth is simply fabulous.
用料
烤鸭鸭架 roast duck cage | 1只 1 piece |
烤鸭肉 roast duck meat | 适量 several pieces |
白米 rice | 1把 1 handful |
香麻油 sesame oil | 少许 1 teaspoon |
白胡椒粉 white pepper | 少许 2 dashes |
烤鸭香粥 Roast Duck Porridge的做法
把鸭架切成块。如果没有剩余烤鸭肉片,可以从鸭架取下鸭肉备用
Cut the duck cage into pieces. If you do not have extra duck meat, simply replace it with meat that you can remove from the duck bones把鸭骨和肉去皮,加入一锅热水,大火煮沸
Remove the skin from the bones and duck pieces, add into a boiling pot of water and boil on high heat把鸭肉片切成细条
Cut the duck pieces into thin strips用热水稍微烫一下,倒掉去油
Use hot water to rinse the duck strips to remove excess oil鸭汤煮到奶白色备用
Boil soup until it turns milky white将鸭汤滤掉骨头备用
Sieve the duck soup and set aside把米用水洗好后,倒掉水,加入鸭汤
Wash the rice with water, pour away the water and add in the duck soup把米煮成粥后,加入切好的鸭肉
When the rice gets cooked into porridge, add in duck strips粥再次沸腾后,加入少许香麻油和白胡椒粉,便能倒入碗内享用
When the porridge boils again, add in one teaspoon of sesame oil and two dashes of white pepper. Serve hot in a bowl
小贴士
所有的香粥都可以用同样的方法做,可以用不同的肉(不想熬肉汤的话,可以用白粥或加入浓汤宝)。只要最后加入香麻油和白胡椒粉就会一样香喷喷和美味
All the fragrant porridge can be made in the same way. You can replace the broth with plain porridge or add in broth seasoning cubes for added flavors. As long as you add in sesame oil and white pepper in the final step, you will be able to make tasty and fragrant porridge.
