米饭 | 1碗 |
鸡蛋 | 1个 |
鸡腿肉 | 1只 |
洋葱 | 半个 |
辣椒 | 3个 |
蒜 | 4瓣 |
罗勒叶Holy basil | 1把 |
炒饭调味料:酱油、鱼露、蚝油、糖 | |
鸡腿肉腌料:鱼露、白胡椒 | |

Spicy Thai Chicken Fried Rice 泰式辣鸡肉炒饭的做法
Combine the chicken with the marinade ingredients. Set aside for later. Use a mortar and pestle to pound the garlic, birds’ eye chillies and salt to a rough paste. Set aside for later.
用白胡椒和鱼露腌制切成小块的鸡腿肉
辣椒和蒜、盐碾碎备用重油煎蛋,捞起备用
Heat the vegetable oil in a wok or frying pan over high heat. Add the onion and cook for 30 seconds. Then add the garlic chilli paste and cook for another 30 seconds.
炒香蒜、辣椒和洋葱Then add the chicken and stir-fry for 3-4 minutes or until the chicken is cooked.
加鸡肉继续煎Add the rice and the stir-fry sauce and stir-fry until well combined and the rice is evenly coloured.
下饭,把炒饭的酱油、蚝油、鱼露、糖下锅Now toss through the holy basil and remove from the heat.
加东南亚辣味罗勒To serve, divide the rice among serving plates. Serve with a crispy fried egg, cucumber and lime.
上桌时切一块青柠檬,两块黄瓜,放上煎蛋
小贴士
Holy basil is known in Thailand as ‘bai gaprao’and also known as hot or spicy basil. Use Italian basil if unavailable.
Use less chilli for a milder dish.
没有圣罗勒(Holy basil)也可以用其他罗勒,根据自身口味调整辣椒用量
