flour 35 g --------- 60 + 5 corn starch
cocoa 15 g. ------ 20 g
milk 60 g ---------- NA
coffee NA --------- 70 g
sugar 37.5 g ----- 100 g (could reduce 1/3)

cream

用料  

egg 3
yolk
oil (37.5 g) 8 tsp
flour (35 g) -
corn starch 2 tsp
all purpose 1/4 cup
cocoa powder (15 g) 2 tbsp + .428 tsp
coffee 60 ml
white
sugar (37.5 g) 9 + 1/4 + 1/8 tsp
along with cornstarch above
mocha cream
heavy cream 1 cup
coffee 1 tbsp
black cocoa 1 tsp
cocoa a sprinkle
sugar 2 tbsp + 1/4 tsp
kalua
vanilla extract drops

mocha cake的做法  

  1. separate eggs and let it get to room temp

  2. bake at 300 F for 1 h in hot waterbath w/ an aluminum foil hat

  3. take off the aluminum foil hat and bake for another 20 mins

  4. drop the pan heavily on the counter to break big bubbles from forming

    flip upside down to cool

    - no need to cool completely.

  5. take the cake out of pan after 30 mins

  6. assemble with cream (whipped by hand)

5 extra large eggs or 6 large eggs
vegetable oil  75g    1/3 cup+1  tablespoon
cake flour 70g  1/2 cup
cocoa powder 30g  1/4 cup
milk  120g     1/2 cup
white vinegar  10g 2 teaspoons
sugar 75g  1/3 cup+1 tablespoon
