牛排steak | 1块(1pound) |
橄榄油extra-vargin olive oil | 1/4勺 (1/4cup) |
白蘑菇Cremini mushrooms | 8只 (8ounces, quartered) |
洋葱onion | 1个 (1, chopped fine) |
蒜瓣garlic cloves | 3瓣 (3, minced) |
牛至oregano | 一点点( 1/2teaspoon dried) |
罐装红辣椒jarred roasted red peppers | 小半罐(1.5 cups, dry and chopped) |
罐装晒干西红柿oil-packed sun-dried tomatoes | 适量(1/4 cup, chopped) |
醋Balsamic vinegar | 45ml(3 tablespoon) |
罗勒chopped fresh basil | 1把(3 tablespoon) |
红三剁牛排的做法
用厨房纸吸干牛排的血水,加盐和黑胡椒调味。中高火,加两勺油,油热后煎牛排,约1分钟一面。Pat steaks dry with paper towels and season with salt and pepper, gently press sides of steaks until uniform 1.5 inches thick. Heat 2 tablespoons oil in Dutch oven over medium-high heat until just smoke. Brown steaks, about 2 minutes per side.
中火,两分钟翻面一次。煎完之后捞出放盘子里。Fillip steaks again, reduce heat to medium, and continue to cook, flipping every 2 minutes, until steaks are well browned and meat registers 120 to 125 degrees( for medium rare) or 130-135 degrees (for medium),7-10 minutes. Transfer steaks to serving platter and let rest until making sauce.

Cook until vinegar is reduced slightly and begins to coat vegetables, about 1 minute. Off heat, stir in basil and season with salt and pepper to taste. Spoon vegetables over steaks and drizzle with remaining 1 tablespoon oil. Serve.
