用料  

蝦shrimp 1斤500g
蒜garlic 10瓣cloves
橄欖油 olive oil 1杯cup
辣椒chilly 若干some

  1. 大蝦去頭剝皮,用鹽胡椒抓勻。蝦頭留着待用。Peel the shrimp, marinate with salt and pepper. keep the shrimp head to use later.

  2. 鑄鐵鍋內加橄欖油,加蒜片,蝦頭。放在中火上慢慢爆出香味和蝦油。 Add olive oil, garlic and shrimp head into a caste iron pan. Put onto medium fire and slowly fry until fragrant and shrimp oil comes out.

  3. 去除蝦頭。喜歡辣味的話加入切碎的幹辣椒。Remove the shrimp crashed chili if desired.

  4. 加入蝦肉,用勺子輕滑開,爆至蝦肉變色。Add shrimp, cook until change color, for about 3-5 minutes depending on the amount of oil and shrimp.

  5. 撒上歐芹點綴,原鍋上桌。蒜蓉蝦油蘸麪包吃。Sprinkle with parsley and serve with the cast iron pan. Serve with bread to dip the garlic oil.

這道菜油要多,蒜要多。就像蝦兒在蒜油裏游泳的感覺。蒜油蘸麪包吃。或者第二天早上做garlic toast吃都是超級棒。完全不浪費。 Key point of this dish is a lot of oil and garlic. The left over of the garlic oil can be used to make delicious  garlic toast for breakfast next morning to reduce the waste.
