用料  

Warm water 1.5+ cups
Dry yeast 3/4 tbsp
Maple syrup/honey 2 tbsp
Salt 1/2 tbsp
Flex seed 1 tbsp
Whole wheat flour 2 cups
Bread flour 1 3/4 cups
Chia seeds Any
Black sesame Any
Butter Depending on mood
Oats Any

Simple whole grain bread的做法  

  1. 1. Combine everything in a mixing bowel to form a dough Knead the dough until you feel good about it. Add more water/milk but don’t make it too sticky

  2. 2. Throw it to fridge and let it rise overnight

  3. 3. Transfer the dough to work surface and knead it about 20 turns. Form into a loaf like shape

  4. 4. Place it in a lightly greased loaf pan and sift a light coating of flour over the top to help keep the dough moist. Let it rise in a warm and humid oven

  5. Preheat oven to 425 F. Place a pan on the lowest oven rack. Also have 1 cup hot water ready

  6. Place the loaf pan on middle rack then pour the hot water into the baking pan underneath. Expect it to bubble and steam. Then close oven door quickly

  7. Bake it for 26-35 mins

  8. Remove the bread from the oven and let it rest in the pan for 5 mins. Then transfer the bread to a cooling rack to cool.

  9. Let it cool completely before slicing for best results

  10. Store the leftovers in a plastic bag at room temp for up to a few days
