【桂花紫薯蒸米糕】(Osmanthus Purple Sweet Potato Steamed Rice Cake)
大米的清香松软在加上紫薯的香甜可口,撒上一点糖桂花,十分美味!
今天我们做桂花紫薯蒸米糕。
用料为:6个桂花紫薯米糕 6 Osmanthus Purple Sweet Potato Steamed Rice Cakes
用料
紫薯 purple sweet potato (cooked and room temp) | 1个 |
糯米粉 Glutinous rice flour | 60g |
粘米粉 Rice flour | 130g |
糖粉 Powdered sugar | 60g |
炼乳Condensed milk | 15g |
干桂花 Dried osmanthus flowers | 适量 For decoration |
糖桂花 Osmanthus flowers jam | 适量 3 table spoons |
水 Water | 80g |
【桂花紫薯蒸米糕】(Osmanthus Purple Sweet Potato Steamed Rice Cake)的做法
糯米粉、粘米粉、糖粉 慢慢过筛到容器中。
Sift the gutinous rice flour, rice flour and powdered sugar into large bowl.加入80g清水混合均匀,成用手轻轻一捏,米粉可成团,轻轻一撮能散开的状态最佳。在过筛一遍。
Add 80g of water mixed evenly with your hand, it should have a sand consistency, can keep into shape when gently pressed in your hand and crumble when the lump is pressed with your fingers. For best results sift the preparation after the mixing is finished.紫薯蒸熟后加炼乳搅拌成泥。
Mash a steamed cooked and room temperature purple sweet potato with the condensed milk.用料理机打成泥,或者勺子压成泥,装入裱花袋。
Sld with a cooking machine or spoon into mud and put in a decorating bag.准备好硅胶模具,筛过的混合粉倒入模具中,大概三分之一位置,散粉就可以,别压。 Prepare the silicone mold, pour the sifted mixed powder into the mold about a third of the way, do not press.
挤一层紫薯,再盖入一层混合粉,表层用刮刀抹平。冷水入锅蒸,大火25分钟。
Squeeze a layer of purple potato mix then cover with a layer of mixed powder, smooth the surface layer with a spatula (do not press). Steam starting with cold water into the pot for 25 minutes..出锅趁热洒干桂花,脱模加上糖桂花,即可食用。
Out of the pot while still hot sprinkle the dry osmanthus flowers, add a teaspoon of osmanthus jam. This treat can be enjoyed hot or cold.
小贴士
注意过筛会更加细腻。
倒到模具中不要压,千万别压。
这个是冷水入锅蒸,大火25分钟。
