零失敗·咖喱牛肉丸飯 Beef Ball Curry
這道菜靈感來自日式咖喱。
創新點:用了牛筋丸(或牛肉丸)代替牛肉,用蘋果代替土豆,提升口感和味道,減少烹飪時間,同時也降低了熱量攝入。

This dish was inspired by Japanese curry.
Two innovations: 1) Use beef balls (you can use tofu too) instead of beef; 2) Use apples instead of potatoes. These changes improve the texture and taste of the dish, and reduce cooking time and calorie intake.

牛筋/肉丸 beef ball or tofu | 8個 / 8 oz |
洋蔥 onion | 1個/count |
胡蘿蔔 carrot | 2根/count |
蘋果 apple | 1個/count |
牛角椒或青椒 green pepper | 2個/count |
彩椒 color pepper | 1個/count |
咖喱塊 Japanese curry cube | 2-3小塊/cubes |
零失敗·咖喱牛肉丸飯 Beef Ball Curry的做法
主要食材合照:洋蔥,胡蘿蔔,牛角椒,彩椒,蘋果,牛筋丸。
Key ingredients:
1 onion
2 carrots
2 green peppers
1 color pepper (color of your choice)
8 oz beef balls (can be substituted with firm tofu)介紹一種甜椒的切法,英國廚師Gordon Ramsay 介紹的。
將甜椒蒂朝下,從上到下切,這樣可以避開椒裏面的白色部分經絡,那部分處理不好容易有酸味。
Cut the peppers leaving the core out.如圖。

洋蔥:對半切,再切小條。
胡蘿蔔:去頭尾切滾刀塊。
甜椒/彩椒:去核切小片。
蘋果:削皮,切小塊,吃掉/去掉邊角料。
牛角椒:去核,切小片。
牛筋丸:用開水汆燙一下,晾涼,對半切
另外,燒一壺開水備用。
Process key ingredients:
onion: cut in half, and then cut in stripes
carrots: cut in chunks
peppers: cut into small pieces
beef balls: put in boiling water for 1 minute and drain; cool down, cut in half
Boil a pot of water (~1.5L/6 cups) for use later.熱鍋,大火,加一點油,放入洋蔥條煸香。
Heat the wok/large sauce pan with oil
Put the onions in放入切好的牛筋丸煸一下,炒勻。
Put the beef balls (cut in half) in, stir fly.待肉丸邊上有些焦色,放入牛角椒和彩椒,炒勻。
When the beaf balls started to brown a little on the edge, put the peppers in and stir.加入胡蘿蔔塊。
Put the carrots in.加入2-3塊咖喱塊。
推薦日式咖喱塊噢!
要咖喱塊噢!咖喱粉做出來效果不一樣。
加熱水至剛可以稍微淹沒食材,加入蘋果塊,攪拌均勻。
Put in 2 or 3 cubes of Japanese curry. Remember to use curry cube. Those are easily available in Asian supermarkets. Curry powder wouldn't work the same here. Trust me!
Add the hot water to cover just enough to cover all the ingredients.咖喱會逐漸變稠,如果想更稠一些,可以在起鍋前加一點水澱粉炒勻。
As the curry thicken up, stir and mix everything.
If you want it to be thicker, you can add a little bit of corn starch or potato starch mixed with cold water.搭配一點青菜和米飯,香噴噴的咖喱飯就做好啦!✅
Add some steamed veggies and steamed rice. Mission complete! ✅
小貼士
一定要用咖喱塊!推薦日式咖喱塊,大部分超市都可以買到。
可以用牛筋丸,也可以用牛肉丸。

Chef's tips:
Promise me you'll use Japanese style curry cube, not curry paste, or curry powder.
If you use tofu for substitution, I recommend firm tofu. I'd sear the tofu to make it firmer and tastier before I put it in with other ingredients.
