1.5litres red wine | shiraz |
12 pear onions (& 2 carrots) | |
200g speck or bacon, cut into 1 cm lardons | |
500g button mushrooms | thyme&bay leaf |
100ml brandy or cognac | |
2tbsp plain flour | |
thyme & bay leaf |

marinade the chicken:
overnigholive oil & butter
12 pearl onions(&carrots)
200g bacon:
12 mushrooms
remove
sear the chicken
return the vegetablesadd 2 tbsp flour
100ml brandy or cognac
burn off
add the marinade liquid:reduce. Chicken stock
(thyme & bay leaf)
paper lid
Boil &simmer : 1-2hoursseason & parsley
