Spiced Pumpkin Bread的做法  

  1. 1/2 cup (120 g) pumpkin or butternut squash purée (canned or freshly roasted—see page 131 for roasting directions)

    1/2 cup (160 g) maple syrup or honey

    4 large eggs

    1/4 teaspoon baking soda

    1/4 teaspoon salt

    1/2 teaspoon ground nutmeg

    1/2 teaspoon ground cinnamon

    1/2 teaspoon ground cloves

    1/2 teaspoon ground ginger

    1/4 cup plus 2 tablespoons (39 ) coconut flour

  2. 1. Preheat your oven to 350°F (180°C, or gas mark 4).

    2. Prepare a baking pan by greasing it generously or lining the bottom with parchment paper and greasing the sides.

    3. Add the squash, maple syrup, and eggs to a medium-size bowl and blend well.

    4. Add the baking soda, salt, nutmeg, cinnamon, cloves, ginger, and coconut flour to the wet mixture and use a handheld or stand mixer to blend well. Let the batter sit for few minutes and mix once more.

  3. 5. Transfer the batter to the baking pan and bake for 40 minutes, or until a toothpick inserted in the center comes out clean.

  4. 6. Cool and frost. Store in a sealed container at room temperature for a few days, in the refrigerator for a few weeks, or in the freezer for a few months.
