whole wheat loaf的做法步骤图


* bob mills 1/4 cup = 38 g

whole wheat flour  400g  a little bit more than 2.5 cups
salt 2g 1/4 teaspoon
water 280g  1 cup + 2 tablespoons
yeast 3g 1 teaspoon
olive oil 25g 2 tablespoons
olive oil the second time 12g 1 tablespoon
salt 2g 1/4 teaspoon
peanuts 1/4 cup
sunflower seeds 1/4 cup
pecans 1/4 cup

** half portion
whole wheat flour  200 g  = (1/4 cup = 30g * 1.5 cup + 8 tsp)
salt 1g 1/8 tsp
water 140 g
yeast 1/2 tsp
olive oil 1 tbsp

olive oil the second time 1/2 tbsp
salt 1/8 teaspoon
peanuts 1/8cup
sunflower seeds 1/8 cup
pecans 1/8 cup

用料  

whole wheat flour (400 g) 2.5 cup + 1/8 cup + 1/4 tsp
salt (2 g) 1.3 * 1/4 tsp
water (280 g)
yeast (3 g) 0.95 tsp
olive oil (25 g) 26 ml = 1.74 tbsp
filling
olive oil (12 g) 1 tbsp
salt (2 g) 1.3 * 1/4 tsp
nuts 3/4 cup

whole wheat loaf的做法  

  1. mix flour, salt, and yeast water

  2. rest for 20 mins

  3. add olive oil and knead

  4. rest overnight

  5. day 2
    take the dough out and cut to smaller pieces

    bring them back to room temp by leaving it out for 1 h

  6. degas and roll to a sheet


    if it's hard to roll, rest for 5 mins w/ cover and then roll

  7. add some oil on top and sprinkle salt

    add crushed nuts and dried fruits to your likings

  8. roll the sheet into a roll, then slice from the center and make a braid. Tuck ends at the bottom center

  9. transfer it into the loaf pan

    cover and rest for 45 mins

  10. bake at 350F for 45 mins

小贴士

- could use caramelized onion (60 g onion + 6 g sugar) and dried cranberries (50 g) and walnut (80 g)

- sesame seeds
- cheese chunks

- could rub oatmeal and crushed nuts on top
